It's All About the Sauce - Part 2


The closest thing I use to beauty products is the grease on the pizza from John’s Pizzeria - Mark Feuerstein

 

For a Classic Neapolitan Style Pizza (click here to read the recipe) a simple tomato sauce is all you need. And whats better for the job than San Marzano tomatoes for its bright acidity, high mineral content, and robust flavor.

 

For a great San Marzano Pizza Sauce, use:

- 1 can (28 ounce) whole peeled San Marzano Tomatoes (drained)
- 1 Tsp Freshly Ground Pepper
- 1 Tsp Kosher Salt
- 1 Tsp Dried Oregano
- 3 Tsp extra virgin Olive Oil

 

San Marzano Cooking Directions:

1. Heat over medium heat a large saucepan and add the drained San Marzano Tomatoes and use our Essential Stainless Steel Pastry Cutter to crush the tomatoes to get a good consistency, based on your preference. I prefer mine to be a mix of chunky and saucy.
2. Mix in the Kosher salt, dried oregano, black pepper and extra virgin Olive Oil, and bring sauce to a simmer.
3. Turn heat to low, simmer sauce while stirring occasionally until thickened and you begin to see oil rise to the top (30 minutes)
4. Your simple and amazing Pizza Sauce is ready!

 

 

For an even simpler Neapolitan Sauce that does not require any cooking, do:

 

 

Simple Neapolitan Pizza Sauce:

  1. Strain 1 can (14-ounce) can of whole peeled tomatoes and further break up the tomatoes with your fingers to release the liquid inside.
  2. Place tomatoes into a blender, add 1/2 tsp salt, and blend until smooth.

 

Alternatively, if you don't have San Marzano tomatoes, you can follow this simple sauce recipe thats very easy to do, requires no heating, and is highly recommended.

 

Simple Pizza Sauce Directions:

  1. In a bowl, combine 1 small can of tomato paste, 1/2 cup of water and a pinch of salt, pepper, dried basil, oregano, thyme, and garlic powder.
  2. DONE! It really is that simple.
